Back in 2002, our company first started trading under the name “The Haus of Meat” in Birallee Village. It was the third butcher shop operated by Mark Bollinghaus at the time, along with his locations in Albury and Wodonga, both trading under different names. Over time, Mark changed all his stores to trade under The Haus of Meat title, thus the Haus family began to grow.
The Haus of Meat has had serval different locations and homes over the years. Currently, we operate out of two locations. You may visit us at our Birallee Village location in Wodonga or at Discount Grocery Warehouse in Lavington.
Our production room is located at the rear of Discount Grocery Warehouse. The bulk of our production work is performed in this room and then transported to our separate Birallee location. You can be sure that all of our products are made in-house, completely fresh every day!

Mark Bollinghaus with his wife (Ineke Bollinghaus)
Mark was born in the Albury/Wodonga region and spent most of his life within the community. This third-generation butcher has always had a passion for the industry. He kept his family in the trade over the years, with his wife Ineke playing a large role in the business from day one. Mark’s two daughters also work in the business.
Mark suffered a stroke in 2015, which has led to the change of management in the company. Mark is still involved in the business; you can often find him serving customers in Birallee. Prior to the stroke, Mark was extremely active and really kept his Haus Mates
(as Mark calls his customers at The Haus of Meat) engaged.
Siska Gifford (Bollinghaus)
Siska started working for Mark in 2011. She is a fulltime member of the Birallee store and is the face of the customer service team.
Bonita started working for Mark in 2006. Bonita runs the retail side of the production room and is the main meat wrapper for the Discount Grocery Warehouse. Along with her husband John, Bonita took on a management position when Mark suffered the stroke.
John is married to Bonita, making him Mark’s son-in-law. John started working for the family company in 2007 as a first-year apprentice. He went on to win Apprentice Of The Year with the William Angliss Institute in 2011. John currently runs the wholesale and warehouse side of The Haus of Meat.
